I absolutely love my Staub mini-cocottes. What’s a mini-cocotte? A mini-cocotte is a miniature stoneware dutch oven that’s about 4″ dia. Think of it as your miniature Le Creuset or Staub dutch oven! If I am being honest, when I first bought them my rationale was “these are so cute!”, only to get home and ask myself, “did I just purchase children’s bakeware?” I am only half kidding..kind of. So, for the longest time I used them for things like hummus and carrots and the occasional creme brulee (mini cocottes look very cute on a cheese board FYI).
I was completely unaware of the mini-cocotte BLISS that was waiting for me. Quarantine has brought on a lot of things, adventures in cooking have not really been one of them; but, adventures in baking on the other hand, that is something I enjoy! I wanted to share 5 recipes from baking blogs that are easy to make in your mini-cocotte, some I have made and love!

EASY MINI BLACKBERRY COBBLERS

These mini blackberry cobblers by Elisabeth & Butter are absolutely mouth watering! I really appreciate how little steps there are and how few ingredients are needed. The recipe yeilds 6 small cobblers, but I have cut this recipe just about in half and it is perfect for two!
STRAWBERRY CAKE FOR TWO

This strawberry cake for two recipe via Dessert for Two by Christina Lane looks delicious! Again, I appreciate the minimal amount of ingredients. Typically in baking there are far more ingredients than cooking recipes, but these look simple enough! You can also skip the glaze if you don’t want the added step.
EASY LIMONCELLO CREME BRULEE
6 INGREDIENTS
Do not be intimidated by how beautiful this image is, becuase these are actually easy to make and have a small handful of ingredients! Aberdeen’s Kitchen has some great recipes and I love the limoncello twist (ha) on this creme brulee! Hats off to the chef!
MINI MIXED BERRY CRUMBLES

These mini mixed berry crumbles from Pretty in Pistachio are phenomenal. I love them soo much. I’ll admit, there are a few extra steps, but trust me, they are worth it! I am a blueberry fanatic and this recipe is simply delightful.
MINI STRAWBERRY RHUBARB PIES
6 INGREDIENTS
Okay, I admit I have not tried this recipe, but how darling are these!! Marriage & Laughter did a great job with these. The steps look super simple and the ingredients are very traditional for a rhubarb pie, so I have a feeling you really cannot go wrong. If anything, it is a lesson in how to make that adorable criss cross pie crust!
Anything cooked or baked in a cocotte always tastes great and those mini cocottes are just too, too cute. Love all the summer dessert ideas!
