I can’t believe Summer is almost officially here. I have so many things I’m looking forward to. I turn 30, we celebrate our 5 year wedding anniversary, and we get to spend quality time with friends. That being said, I’m also looking forward to a laid-back Summer really enjoying time at home while this unique work from home situation continues. When it comes to being at home, truth be told we have always spent a lot of time in the kitchen. So, I thought that in addition to my regular content, it would be fun for me to share as I cook my way through some of my favorite cookbooks this Summer!
I have so much respect for the serious cooks, the health-conscious helping others, and the fun foodies, all who live and share their passion. Me periodically sharing my adventures in the kitchen is not to say I’m on the same level as these amazing people, because I’m not. I’m just a woman who loves to cook on a Friday night, bake a cake on a Sunday for no reason, and enjoy the process. It actually took me a really long time to develop a healthy and morally-neutral relationship with food. I had an eating disorder for many years, and once I found the joy of cooking, I felt free. Creating something easy and good in our own home that we can really enjoy just brings contentment and happiness (and usually a lot of laughs).
Whether it’s a light take or a dense dish, I like to try recipes that are delicious, nutrient rich, comforting, uncomplicated and fun. I don’t really know everything I’m doing, but that’s half the fun of it. One of my favorite chefs to follow is Molly Baz, her new cookbook “Cook This Book,” just launched and I’m so excited. She has a bit of a cult following and for good reason. Andrew and I thumbed through the recipes and there was not a single one we didn’t nearly drool over. Molly also packs so many approachable resources into her book, making the recipes easily digestible (see what I did there?!) and stress-free. I highly recommend picking up a copy! Next week, we’re making Molly’s Chicken Cutlets with Kimchi Ranch (sharing the recipe via GMA here, also in her book). So, I hope you’ll join me as I cook my way through this summer, stumbling along the way and enjoying some good eats.
